Easy, healthy & delicious!
With both of the kids being vegetarians, I try to come up with creative dishes to give them variety in their diets. However, veggie Lo Mein isn’t just for vegetarians. Everyone can enjoy this dish. It’s a great, light week-day lunch or quick dinner.

Vegetarian Lo Mein brings unbelievable flavor to your taste buds and it's so easy to make!
Vegetarian Lo Mein
Ingredients:
Sauce:
1/4 cup vegetable broth
3 tbsp soy sauce (low sodium)
2 tbsp brown sugar
1 tbsp sesame oil
Lo Mein:
8oz. Lo Mein noodles (cook according to package instructions)
1/2 cup of shredded carrots (add more or less based on your preference)
1 cup broccoli - chopped
1 large red bell pepper - sliced
1 medium white onion - sliced
4 garlic cloves
1 tbsp oil
Instructions:
Sauce:
In a small bowl, combine the broth, brown sugar, sesame oil and soy sauce. Whisk until well combined. Set aside.
Lo Mein:
In pre-heated skillet with oil, sautee' carrots until golden brown. Remove and set aside. Repeat this process with onions, broccoli and bell peppers. Note: Cooking vegetables separately creates the best flavors.
Add all vegetables back to the skillet. Press garlic into the vegetables and toss everything together.
Add Lo Mein noodles and sauce. Toss together and let Lo Mein cook for 3-5 minutes.
Remove from heat and serve right away.
This meal is low in sugar, calories and very delicious!
