As I mention on the 'About' page I was recently diagnosed with Type 2 diabetes. With that, I've had to make some dietary adjustments. I've always eaten healthy mind you, but now it's even more important for me to do so. So, I've been searching for and/or creating recipes for dishes that will work for my new and improved lifestyle. Today's dinner is my tasty curry egg salad atop a whole grain bagel and a kale salad with a home-made citrusy dressing.
There is a funny story behind this kale salad … A few weeks ago, my husband (David) and I were out to dinner, we ordered an appetizer that came with a side of kale salad. We didn't want the salad, just the appetizer, as we both feel that kale is a tough leafy green with tartness and we just weren't interested.
Low and behold, we tried it and LOVED it. So, I decided at that moment that I was going to recreate this salad … and here were are today. It's very close to the restaurant version, I think a little better. I hope that you decide to give it try and enjoy it as much as we have. The recipe can be found on the 'Recipes' page …
This salad is filled with fresh veggies, nuts and a little bit of fruit all of which are good for you as they are packed with protein, fiber, vitamins A, C, calcium and iron. It's an easy salad to make and delicious to eat! Bon petite!
