One of my favorite summer desserts is key lime pie, not only to make it, but to eat it too!
For over 15 years now, I’ve made this dessert for one summertime event or another. I’ve made it so many times, that I know the recipe by heart.
Well over this weekend, one of my dearest friends (we’ve been friends since Jr. High school) had David and I over for dinner. She kicked the meal off with a beautiful display of cheese, fruit, and veggie trays. All fresh and delicious! The main course was a wonderful bourbon glazed grilled salmon, asparagus, fresh corn on the cob and grilled sweet potatoes the size of my head … It was MAGNIFICENT!
My contribution to the meal was dessert, so of course I decided to make my key lime pie. However, I made it with a twist this time; making it a little different than I have in years past. Instead of the typical graham cracker crust, I made it with a chocolate crust. I also decorated the pie more than I usually do by using lime slices, mint leaves, and blackberries.
I wasn’t quite sure how well this new and improved version of my standard key lime pie would be received, but the reviews were beyond positive! I too, have to say that I think it was quite scrumptious and a nice change from the norm too.
