Vegetarian Rice & Bean Casserole

The end of the school year festivities begins! Our daughter Kennedy will be wrapping up her junior year of high school next week and she and her friends are already getting into summer activity planning mode. Today the girls worked out after school at a local gym and then came over to our house to hang out afterwards. And you know when the kids come to hang-out, you better have food to feed them … And the fact that I look for any reason to entertain, I was ready!

Our kids Anthony (AJ) and Kennedy are both vegetarians. It just so happens that a few of Kennedy’s friends are too. So, I prepared this vegetarian rice and bean casserole with a side of tortillas and toppings of sour cream and salsa to fill them up. I also served a refreshing Limeade to quench their thirst.




The casserole is easy to make, it’s filled with cheesy goodness, along with rice and veggies. This is a terrific option for the vegetarians in your life. It can be made ahead and frozen so it's extremely quick to prepare. It is also great for a family dinner or your next party!
